Roast beef has been a dinner table staple for many years. It's a food that pleases even the pickiest of eaters, it's fairly inexpensive and it's easy to cook. It's also versatile. You can add all sorts of herbs and spices to create a rich new flavor, and it goes with practically everything. It's casual enough to fill a sandwich but fancy enough to serve at a dinner party. If you have a roast to cook or you have leftovers and aren't sure what to do with them, here are some ideas:

Tacos

Everyone loves tacos, and you can fill them with practically any type of protein, including roast beef. Shred the beef, and add it to a warm tortilla along with some of your favorite toppings. You can turn it into a delicious Tex-Mex meal or simply add cheese and sauce to make a taco version of a roast beef and cheddar sandwich.

Beef Stew

If you need something hearty on a cold winter day, beef stew will hit the spot. Just add your favorite veggies, like sliced carrots, potatoes, onions and mushrooms, and any herbs and seasonings you like. Cook it in water, broth or stock, and thicken it with flour or cornstarch.

Chili

Another hearty dish that will keep you warm and full when it's cold outside is chili. If you typically add a protein to your chili, just substitute roast beef. It'll taste great mixed with the tomatoes, peppers, onions, beans and other flavors.

Cheesesteak Sandwich

If you love a Philly cheese steak sandwich, you can actually make it with roast beef instead of the usual cuts of steak you may use. Just cook the beef with green bell peppers to add flavor, and slice it thin before adding it to your bun. Top it with provolone cheese, some of the peppers from the dish and mustard and mayo.

Beef Quesadillas

Getting back to the Tex-Mex, as it turns out, roast beef makes amazing quesadillas. All you need are tortillas, cheese and butter or oil. You can make them in a skillet or bake them in the oven and dip them in sour cream or salsa.

Shredded Barbecue

Barbecue is huge, especially in the South in states like North Carolina, Tennessee and Texas, but most of the time it's made from pulled pork. If you don't eat pork or you want to use that roast, try shredding it up and adding your favorite barbecue sauce. Eat it alone with your favorite barbecue sides, like coleslaw, or throw it on a bun for a sandwich.

Beef Stroganoff

Beef stroganoff is another one of those classic dinner dishes, and you can make it with roast beef. As a matter of fact, it's super easy, so it's great for those nights when you don't have much time to cook. Cut the beef into small pieces, brown them in a skillet and then add the ingredients from the recipe of your choice. Once it's warm and the meat is fully cooked, you can serve it over rice or pasta.

Shepherd's Pie

If it's comfort food you seek, why not turn that roast beef into a big dish of shepherd's pie? Chop up your roast beef, and cook it with onions, garlic mixed vegetables, gravy, Worcestershire sauce and salt and pepper. Spread mashed potatoes on top, and bake it until it's fully heated.

Pizza

If people can put pineapple on a pizza, they can put anything on a pizza, including roast beef. Chop it up, and add it to any pizza recipe, along with your other favorite toppings. You can also try a Philly cheesesteak version by topping the pizza with the beef, peppers, onions and provolone cheese.

Classic Roast Beef and Vegetables

Last but not least is everyone's favorite old standby: sliced roast beef with vegetables. It's something you can throw into the slow cooker and cook while you're working all day, or it's something you can serve up for a special Sunday dinner. Peas, carrots, potatoes and green beans are all great options for sides. Just don't forget to make the gravy.
